Job Overview
The FSQA Sanitation Technician is responsible for hands-on food safety verification during Fresh Cuts' transition from production to sanitation, and through completion of the nightly sanitation cycle. The role includes supporting in-progress production checks, verifying sanitation crew compliance with GMP and food safety requirements, completing sanitation and pre-operational records, and conducting a recurring environmental monitoring check.
Key Responsibilities
- Review food safety records and the equipment/production schedule at the start of shift. Check floor and room conditions relevant to food safety (e.g., environmental controls, general facility conditions).
- Prepare and verify sanitizing solutions used in produce washing, confirming they meet required specifications before and during use. Perform metal detector and X-ray equipment verification checks at required points in the production process.
- Monitor and record processing area temperatures.
Monitor the production floor for GMP compliance - proper hygiene practices, PPE use, and adherence to food safety procedures - and flag any non-conformance.
- Monitor the sanitation crew's compliance with SSOP, GMP, PPE, and pre-operational standards throughout the cycle.
- Hold the authority to flag and hold product or halt a process that does not meet food safety specification, and notify a Fresh Cuts Supervisor or the FSQA team promptly; FSQA must be notified immediately when a hold is placed, and releasing a hold requires FSQA review and approval (on-call if outside business hours).
- Coordinate directly with the Fresh Cuts Supervisor or the Sanitation Supervisor on equipment issues or inspection findings.
- Maintain accurate, real-time food safety documentation using the company's digital tracking systems, ensuring all records are completed before the end of each shift, including closing out all required sanitation records and reports.
- Take ownership of corrective actions when a nonconformance is found, follow up with the responsible party -Production, Maintenance or Sanitation teams, as applicable, and escalate items that are not progressing.
- Conduct post-sanitation pre-operational inspection of rooms and equipment as sanitation nears completion, including hygiene verification testing.
- Conduct a recurring, facility-wide environmental monitoring check on a set schedule.
- Assist in verification and validation of paperwork completed by production staff.
- Assist in training and coaching production staff on food safety and GMP standards
Job Requirements
- Comfortable using tablets/computers for real-time documentation.
- Strong attention to detail, well organized, and comfortable working independently in a fast-paced environment; professional and presentable, with clear communication skills.
- Able to stand and walk the production floor for extended periods, including in refrigerated areas.
- Able to lift at least 50 lbs. and to bend, kneel, or crawl as needed.
- Able to work overnight hours with limited on-site supervision.
Education and Experience
- High school diploma or equivalent; 1–2 years of experience in food safety, quality control, or a related field.
- Bilingual (English/Spanish) required for direct communication with team members.
- Food safety training (e.g., HACCP Basics, AIB Food Safety Essentials, or ServSafe Food Handler) preferred, or willingness to complete assigned training within a specified timeframe.
